My current preference is to have the deployment remove old versions of files. The main reason for this is that whenever we rebuild the React.JS client, new filenames are generated, and I'm concerned that over time we'd end up building up a bunch of unneeded cruft, and there doesn't seem to be an easy way to specifically undeploy known old filenames.

The downside of this is that we're using a semi-supported LetsEncrypt extension to manage the site's SSL certs, and it appears as though removing old files also destroys the jobs that are used to auto-renew the certificates.
